The Well Fed Student: Healthy pancakes

This is the easiest and tastiest recipe for filling, fluffy, American-style pancakes, without any guilt. It’s a filling, healthy breakfast that feels like a real treat. I usually use a gluten-free flour like buckwheat flour or brown rice flour, but you can use whatever you have. You can also use oats instead of flour, which I often do, but you will need to blend the oats up first to break them down otherwise it won’t work as well.

Even without any toppings this is an extremely balanced breakfast, with a good amount of carbohydrates and protein (about 15g), as well as extra nutrients from the banana. The banana also makes the pancakes naturally sweet, so you won’t need to drown them in as much syrup or sugar as you might usually! Just remember – the riper the banana, the sweeter and more delicious the pancakes, and riper bananas are also much easier to digest. I usually just put lemon juice and yoghurt on top, with some berries and seeds and maybe a drizzle of honey. You could also put peanut butter or another nut butter on top, maple syrup, granola… The possibilities are endless!

  • 1 ripe banana.
  • 1 egg.
  • 1/3 mug (about 35g) of any flour or oats (blended).
  • 1/4 mug of milk or water.
  • Butter or coconut oil to cook with.
  • Toppings of your choice, such as: Lemon juice, yoghurt, berries, nuts and seeds, honey, nut butter etc.

 

Mash the banana to a smooth paste. I find this easiest to do on a small plate with a fork.

Crack the egg into a mug or a jug, and whisk it up. Add it the mashed banana and mix together.

Add in the flour a little bit at a time, mixing as you go. This stops it from going lumpy.

Mix in your milk of choice (I’ve been using oat milk recently which is really good). Depending on how big the banana is you may not need all of the milk, or you might need more. You want the batter to be thick but pourable.

Melt the butter or coconut oil on a medium heat in a frying pan, and pour in a quarter of the batter (or half, depending on how big you want them) in a small circle. When bubbles start appearing on the surface that means it is cooked enough to flip over.

When all the pancakes are cooked, decorate with the toppings of your choice, and make sure to take a picture to impress everyone with before tucking in!
