Food | Fresh Slice – Romantic raspberry mousse

Valentine’s Day is upon us, and as members of the student community, we haven’t got the cash to splash on a romantic meal for two. This light raspberry mousse is perfect for sharing, quick to make and is delightfully delicious.

Ingredients

200g white chocolate
200g raspberries, fresh or frozen
150g full fat soft cream cheese 100ml double cream
A handful of almonds

Melt the chocolate in the microwave or in a glass bowl over a pan of just simmering water. Set aside and allow to cool. Choose about six or eight raspberries and set them aside, so you can use them for decoration. Release your anger towards partners past and blitz the remaining raspberries in a food processor until smooth.

Add the pureed raspberries to a bowl with the soft cheese and the double cream. Beat the mixture until it is thick and smooth and then fold in the cooled melted chocolate. Spoon the mix into two tall glasses, and embellish with the raspberries you set aside earlier and a sprinkle of almonds. Leave in the fridge to chill overnight.

If you feel generous, you may let your other half lick the bowl. It is a special occasion, after all. If you fancy something a little more decadent, fill a pastry case with this mousse. Then, drizzle with white chocolate and sprinkle with raspberries and simply leave in the fridge to thicken.

Perfect for sharing with the one you love, though you don’t have to. I found it hard to.
