Summer is here, and everyone is starting to think about that bikini body. But, there is no need to forego all sweet and tasty treats; these banana cookies are both deliciously satisfying and delightfully healthy.
Ingredients
2 very ripe bananas
100g of oats
1 tsp of cinnamon
1 tsbp of honey (or more to taste)
1 tsp vanilla essence
Optional
Handful of blueberries, chopped nuts, dried fruit
1 tbsp of chia seeds
1 tbsp of flaxseed
Equipment
Mixing Bowl, fork, teaspoon, tablespoon, measuring scales, baking tray and baking parchment
Method
- Line the baking tray with baking parchment and preheat the oven to 180°C/fan 170°C/gas mark 4.
- Mash the bananas up with a fork. Once you have done this, mix in all the other ingredients. If your ingredients seem a little dry at this point, you can always add a splash of milk.
- Spoon on a tablespoon of mixture on to the baking tray. You don’t need to worry about keeping a distance between them, as they won’t spread.
- Put them in the oven for about 20 minutes until golden brown on top.
There you have it, easy, delicious and healthy cookies. They work really well with yogurt as an alternative breakfast, or by themselves as a healthy snack!
